HIO Oyster of the Month Club March 2025 selection
Mid-sized to fairly large shells, of greenish-brown color, intricately fluted and frilled, with a deep cup. They shuck easily, revealing a generous amount of dense, juicy meat. The flavor offers moderate salinity, bracing minerality, hints of seaweed, fresh cucumber, and melon. Very good Pacific oysters — you can tell at a glance they’re beach-grown, as opposed to tumbled ones with smoother shells. Produced by Chelsea Farms, who also cultivate the famous Chelsea Gems.
