14x Hog Island Olympia oyster
Tomales Bay, CA
Species: Olympia oyster (Ostrea lurida)



Крохотные, плоские раковины насыщенного коричневого цвета, попадаются и зеленоватые экземпляры. Очень легко вскрываются, meat-to-shell ratio отличное, хотя абсолютные размеры совсем не радуют, конечно. Жидкости внутри немного. Во вкусе заметная соль, подсолнечное масло, cельдерей, горчица, металлические нотки. Весьма насыщенный вкус, хотя тэйлоровским эти олимпии всё-таки проигрывают. Первый калифорнийский олимпийский урожай за долгие годы, ура!!! Хорошие, но очень уж мелкие. Взял дюжину навынос в точке в Ferry Building, положили на две штуки больше, спасибо!

Olympias once flourished along the Pacific Coast and were highly valued by the coastal Miwoks, but in the late 1800s, Oly's almost disappeared due to over-harvesting during the Gold Rush. Thanks to a number of restoration projects and a few dedicated shellfish farmers, the tiny bivalves are once again on the rebound! We're honored to be a part of the restoration efforts to reinvigorate wild populations and to be able to offer a rare taste of a truly native California seafood. Over the past 2.5 years, our farm team has spearheaded the effort to grow this native species in Tomales Bay to market size, and today, we're proud to offer the first release of California-grown native Olympia oysters in decades! Growing Olympias is a true labor of love, but worth the effort. We're hopeful these farming efforts contribute to the recovery and restoration of the wild population in Tomales Bay.
