Large, beautiful brown and beige shells. Elongated and often curved, quite cupped. Shucking takes some skill because the shell can break due to its considerable length. Inside, a generous amount of juicy meat. The flavor carries noticeable salinity, a touch of mayo and mustard, miso soup, pickles, canned peas, and hints of fried potato. Awesome! Really like these bivalves. As far as I can tell, these are the same Katama Bay / Katama Mama oysters, just this time the name reflects the Signature Oyster Farm located in Katama Bay on Martha's Vineyard, which is growing them. The merroir there is truly wonderful.
