Species: Atlantic oyster (Crassostrea virginica)

Medium-sized shells of a creamy-brown color with occasional bluish speckles and a distinct black stripe on the bottom. Round in shape, rather flatter-cupped. Easy to open, they hold a substantial amount of medium-density meat. The taste is dominated by a strong saltiness, with seaweed salad, miso soup, prosciutto, dried fish, and hints of minerals. The saltiness is particularly noteworthy.

Medium-sized shells of a brownish-purple color with beige patches. Fluted and deeply cupped, they fit comfortably in the hand. Somewhat fragile, so they should be opened with care. Inside, there's a generous portion of dense, juicy meat. The taste offers a mild saltiness, seaweed salad, cucumber, melon, mustard, and mayonnaise, with a hint of astringency. While the saltiness could be more pronounced, these oysters are overall quite enjoyable.
